I use rolled oats, blended into flour (gluten free waffles). Then all other ingredients are blended together in the blender, poured into a large bowl and the oat flour is stirred in. I do not melt the coconut oil and use water instead of milk. I always make a double batch. We top the waffles with applesauce and maple syrup. These waffles keep you satisfied and not hungry even when working hard on the farm. This is the best use of overripe bananas!

I added some cinnamon and ginger to create additional flavor profiles, and cut down the sugar a tad (since bananas have their own sweetness. I didn’t have enough of whole wheat flour so had a blend of whole wheat and plain. Totally will make it again. Thank you!
